4. Grain bowls
Ancient grains are having a big moment right now. Amaranth, quinoa, millet, and more are growing in popularity because they are low on the glycemic index, they are filled with fiber, and they are an all-around great substitute for less-nutritious white rice. Think burrito bowl, but even more nutritious. They are easily microwavable, and you can add lean proteins like chicken breast or black beans. After you microwave, add your cold ingredients like lycopene-rich tomatoes, iron-rich spinach, brain-healthy avocado, and yogurt-lime dressing.
